Plant s are rich source s of phytochemical compounds (phenolic compounds, flavonoids , anthocyanins , etc. ) , with different func tions such as antioxidant. Antioxidants are important in protection of plants against oxidative stres s. In this stud y, the content of total phenol ic compounds , flavonoid s and anthocyanins w ere investigated in Crataegus meyeri fruits during maturation. Intact and without pest damage fruits harvested from t h ree trees during four stages with seven day s intervals . P he nolic compounds content evaluated with Folin – Ciocalteus , flavonoid content with aluminum chloride and total anthocyanins with pH differential method . Data were analyzed by SPSS on completely randomized design with three replications using Duncan at 5% lev el. R esult s showed that the free phenol ic compound s and anthocyanins were increased significantly during maturation . It was no t observed significant change in cell wall - linked phenol compound s . Also , flavonoids content after third week showed a significant decrease . It was concluded that ,
