Abstract
This discovery is very important for public health because more and more people in Iran and Iraq are eating processed meats like sausages and cold cuts, and too much nitrate and nitrite additions can be bad for your health. These chemicals are very important for keeping meat safe and fresh, but if they are used incorrectly or in large amounts, they can turn into nitrosamines, which are cancer-causing and very dangerous for people who eat them. The fact that there is no consistent monitoring in any country, especially Iraq, and that there is no up-to-date statistics comparing domestic and imported goods show how important it is to have systematic monitoring . Also, the region's hot weather can make these ingredients break down and change even more. This study will give health authorities important information, help shape regulatory frameworks, and ultimately help keep consumers safe through smart policy and industry practices by accurately measuring the levels of nitrate and nitrite in meat products that are commonly eaten in two major regional markets.
