Investigation of Phenolic and Flavonoid Content Changes in Okra (Abelmoschus esculentus) Seeds

Phenolic and flavonoid compounds are bioactive secondary metabolites that play crucial roles in plant defense and human health. Their strong antioxidant, anti-inflammatory, and anticancer properties have made them valuable for pharmaceutical, nutraceutical, and food industries. Enhancing the levels of these compounds in plant-based foods can significantly contribute to improved health outcomes [1]. This study investigates and compares the physicochemical and biological characteristics of okra (Abelmoschus esculentus) seeds in their raw and germinated states, focusing on the effects of germination on these properties. A primary objective is to explore the metabolic alterations during the germination process. Additionally, changes in the levels of phenolic and flavonoid compounds were assessed before and after germination. Germination represents a critical developmental stage characterized by the emergence of the radicle through the seed coat, influenced by environmental and endogenous factors [2]. Analysis of total phenolic and flavonoid contents showed significant increases following germination. The total phenolic content rose from 11.44 mg gallic acid equivalents (GAE) per gram of dry extract in raw seeds to 17.98 mg GAE/g in germinated seeds, corresponding to an approximate 57.2% increase. Similarly, the total flavonoid content increased from 11.51 mg rutin equivalents (RE) per gram of dry extract in raw seeds to 13.84 mg RE/g in germinated seeds, indicating an approximate 20.2% increase. The substantial elevation in phenolic and flavonoid compounds post-germination suggests that germinated okra seeds possess enhanced bioactive properties, potentially offering greater health benefits due to the increased concentration of these vital secondary metabolites.
